What happens when water/mud gets in carburetor?

a little water in the carb would not hurt anything. , mud would though. You probably have shaken up some trash in the fuel tank as your were bouncing around in the Baja. change your fuel filter and try some gas treatment before you go to far. . and you probably washed the motor off afterwards. that usually washes the oil and grease off the throttle mechanism and maybe you only need to lubricate those parts maybe some dirt in the throttle cable as well
